PUMPKIN SOUP
Ingredients
- olive oil - 2 tbsp
- onion - 1[chopped]
- leek - 1 [white part, finely sliced]
- garlic clove - 1 crushed
- ground coriander - 1/2 tsp
- ground cumin - 1 tsp
- fresh grated nutmeg - 1 tsp
- pumpkin - 1 kg [peel it]
- large potato - 1 [peel it]
- chicken stock or vegetable liquid stock - 1 L
- thin cream - 1/2 cup [125 ml]
Method
heat oil in a saucepan on a low heat, add onion and leek,cook for 2 or 3 minutes,until softened but not coloured. add garlic and spices and cook and stir for 30 seconds. add pumpkin, potato and stock and boil it on a low flame cover and simmer for 30 minutes. allow to cool slightly, then blend in bowl.
after some time return soup into pan, add cream and stir and reheat gently.
season and add a some little nutmeg
now enjoy a delicious pumpkin soup with bread
